Summer Chia Pudding


(for 2 to 3 servings):

- 1/3 cup chia seeds

- 1 1/2 cup coconut milk (I like canned coconut milk for the added thickness and creaminess)

- 1 tablespoon maple sirup

- 1/4 teaspoon cardamom powder

- a pinch of Himalayan salt

- a few sweet cherries

- a few soaked and peeled almonds (soak overnight in cold water or soak in hot water for 30 mn)


In a mason jar or other container, mix chia seeds, milk, maple sirup, cardamom and salt.

Let rest for about 10 mn, stirring frequently to help with rehydration of the seeds.

Serve immediately with cherries and almonds, or put in the fridge for later use.

Take out 30 mn before eating so it's not cold ;)
