I mean, you get it, this dhal is just the perfect dish :-D
I prepare it in my Instant Pot, throw everything in there and cook it under pressure for 4 mn. If you don't have an Instant Pot (you need to get one), cook it as a normal stew for 20 to 30 mn, until the lentils are falling apart and it's nice and creamy.
This makes 3 to 4 servings.
Ingredients:
1/2 butternut squash, washed but unpeeled, cut in big chunks
1 cup red lentils, soaked for 20 mn if possible, otherwise just rinsed
1/2 cup brown rice
1 handful golden raisins
2 cups greens, roughly chopped (I used beet tops, but feel free to use kale, collards, chard, spinack etc)
1 tablespoon Kitchari spice mix (use code EMILIE for 15% off)
2 tablespoons ghee (this is important, as it balances the astringent and drying quality of the red lentils, don't skip or use less)
optional: hempseeds + a handful basil leaves when serving
Directions:
Add everything together, cover with water and stir.
Add extra salt to taste.
