(for one serving):
- 2 eggs (the best quality you can get)
- 1/3 cup cilantro leaves
- 1/4 teaspoon turmeric
- 1/4 teaspoon pippali (sub with black pepper if necessary)
- a pinch of salt
- 1 tablespoon fresh feta cheese
- 1/4 teaspoon sesame seeds
- 1/2 teaspoon ghee
Whisk eggs, cilantro, spices and salt with a fork in a small bowl.
Heat ghee in a pan and spread evenly.
Pour egg mixture on top, reduce heat to low and springle feta cheese on one half of the eggs.
When it starts to set, fold the other half on top of the half with the cheese.
Cook to desired consistency, then serve and sprinkle a bit more feta and some sesame seeds on top.
