Cooked Fruit Breakfast

If cooked fruit seems too easy and uninteresting to make, think again. This spiced, oily stew is the perfect quick breakfast that will leave you full and satisfied, but not heavy.


(for 1 serving):

- 1 small apple

- 1 Fuyu persimmon

- 1/2 teaspoon Sweet Spice mix (mix equal quantities of ginger, cinnamon and cardamom powder each in a jar, shake to mix, then keep the rest for later)

- 1 teaspoon ghee (or coconut oil, but ghee is preferred this time of year)

- 1/4 cup water


Core and cut the apple (don't peel). Peel and cut the persimmon.

Add the ghee to a sauce pan on low heat, add the spices and let them become fragrant for a moment (be careful of not burning them, stirring and low heat are keys). Add the fruit, stir and cook for 1 to 2 mn. Add water, cover with a lid ajar and cook until fruit is soft.

Serve and enjoy :)
